Bannock is a flatbread made of flour (formerly cornmeal, now wheat flour), water and salt. According to the Nations, bannock was baked by burying it in the sand near the fire (see the video on Aboriginal cooking), or rolled on a stick and cooked on the fire, or more recently, cooked in a pan.

The basic recipe is very simple, but different ingredients such as fruit or herbs can be added.

The word “bannock” is actually of Scottish origin. It seems that the word was adopted when the Europeans arrived, although the bread had existed well before their arrival.
